Absence… from Bettinna’s Food

I haven’t been posting anything new the past week due to a cold that we had. But finally we are both fine and I can start creating. Tomorrow is will be the first day. I have so many ideas… will see what it will come out this week. Hope you still enjoy my blog, find something interesting.

Have a nice summer evening, shortest in the year and celebrate in stile… maybe somewhere outside with friends, some tapas and champagne… Enjoi!

Finally BBQ season…

… and we begin with grilled fish, potatoes in the oven, a fresh lettuce salad all served with a dollop of tzatziki. Tonight I’ve put the fish in a zip bag to marinate with olive oil, thyme, dry dill and garlic powder. I’ve put the bag in the fridge to stay overnight. Tomorrow you’ll get the recipe.

Spring is here and summer is almost here, some of the exotic fruits and vegetables can be found in different supermarkets. My plan for the summer, use the fruits and vegetables that are in season and try to create savory and nice dishes so I ca share my recipes with you.

My new herb and spice garden…

It is happening, finally I got most of my seeds and this week I’m planning on planting my own herbs and spices to use this summer. I got dill and parsley, oregano and basil, thyme and chili peppers in different colors. I wonder if I should plant some garlic and chives… I first have to find the seeds and a visit to the garden shop might add a few plants to my “garden” I hope my little patch will provide me with enough herbs and spices for the summer.

I dream about the time I spent in Nepal, going to the market and getting spices to try and fail but also make some nice dishes… I do like to use spices for marinades and I plan on making some special oils for salads and other recipes using different herbs and spices… I just found some nice small bottles of 100 ml that would make perfect scented oil bottles…
