Banana bread with pecan nuts


  • 125 g butter
  • 150 g raw sugar
  • 1 tbs vanilla extract
  • 4 very ripe bananas (medium size)
  • 2 eggs
  • 250 g flour
  • 1 tbs baking powder
  • 150 g pecan nuts or other nuts

Pre-heat the oven to 150°C and grease a loaf tin. Melt the butter with the sugar and vanilla in a saucepan over medium heat. Remove from heat and add the mashed bananas, mix well. Add the eggs and mix. Chop the pecan nuts and add to the mixture together with the flour and the baking powder. Mix well.

Bake at 150°C for about 45-50 mins. Leave to col and enjoy.
